About This Recipe
Pasta is one of the most beloved foods in the world — a versatile, comforting, and endlessly customizable dish that can be simple or sophisticated. From Italian classics like Carbonara and Bolognese to modern twists like Creamy Garlic Mushroom Pasta or Spicy Arrabbiata, there's a pasta dish for every occasion. This recipe brings together perfectly cooked spaghetti with a rich, flavorful tomato sauce infused with garlic, herbs, and a touch of olive oil.
Ingredients
- 400g spaghetti
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 400g canned crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh basil leaves for garnish
- Parmesan cheese, freshly grated
- 3 egg yolks + 1 whole egg (for Carbonara variation)
- 100g pancetta or guanciale (for Carbonara variation)
Instructions
Cook the pasta
Bring a large pot of salted water to a rolling boil (4 quarts water + 2 tbsp salt per pound of pasta). Add the spaghetti and cook according to package directions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
Make the sauce
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it. Pour in the crushed tomatoes and stir to combine.
Season the sauce
Add the oregano, basil, red pepper flakes, salt, and black pepper to the tomato sauce. Let it simmer gently for 10-12 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.
Combine pasta and sauce
Add the drained spaghetti directly to the skillet with the sauce. Toss everything together over low heat for 1-2 minutes until the pasta is well coated. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
Serve and garnish
Plate the pasta and top with freshly grated Parmesan cheese and torn basil leaves. Serve immediately while hot. Pair with crusty garlic bread and a fresh green salad for a complete meal.

Tips & Tricks
- Always salt your pasta water generously — it should taste like the sea. This is your only chance to season the pasta itself.
- Never add oil to the pasta water — it prevents the sauce from clinging to the noodles.
- Save your starchy pasta water — it's liquid gold for binding and thickening sauces.
- Cook pasta 1-2 minutes less than the package suggests for that perfect al dente bite.
- Toss the pasta directly into the sauce rather than pouring sauce over plain pasta for better flavor distribution.
